It is widely cultivated for its edible fruit pods and as an ornamental tree in gardens. The Carob Tree can grow up to 55 feet tall. The crown is broad and semi-spherical, supported by a thick trunk with brown rough bark and sturdy branches. Leaves are 4 to 8 inches long, alternate, pinnate and may or may not have a terminal leaflet. Most Carob Trees are dioecious (separate male and female plants), though some can be hermaphrodite (both sexes on the same plant). The trees blossom in autumn (September–October). The female flowers are red, small and numerous, spirally arranged along the inflorescence axis in catkin-like racemes borne on spurs from old wood and even on the trunk (cauliflory); they are pollinated by both wind and insects. The fruit pod is light to dark brown, oblong, flattened, straight or slightly curved, with a thickened margin; 4 to 12 inches long, 3/4 to 1 inch wide, glossy, tough and fibrous. The fruit pods are filled with soft, semi-translucent, pale-brown pulp and 10 to 13 flattened, very hard seeds which are loose in their cells and rattle when the pod is fully ripe and dry. The unripe pod is green, moist and very astringent; the ripe pod sweet when chewed (avoiding the seeds). The pods take a full year to develop and ripen. The ripe pods eventually fall to the ground and are eaten by various mammals, thereby dispersing the seed. Likewise, carob consumed by humans is actually the dried (and sometimes roasted) pod and not the seeds. The hard seeds inside the pods are not edible. Carob, dried or roasted and having a slightly sweet taste in powder or chip form, is used as an ingredient in cakes and cookies as a substitute for chocolate. In the Mediterranean region, peasants have virtually lived on the pods in times of famine but the tree is valued mostly as providing great amounts of pods as feed for livestock. The Carob Tree grows well in warm temperate and subtropical areas. It tolerates hot and humid coastal areas. As a xerophytic (drought resistant) species, the Carob Tree is well adapted to the ecological conditions of the Mediterranean region. When not grown for legume harvests the plant is very drought tolerant and part of ‘xeriscape’ landscape design for gardens, parks and public municipal and commercial landscapes. In Cyprus, their carob syrup is known as Cyprus black gold, and is widely exported. In Malta, a syrup (ġulepp tal-ħarrub) is also made out from carob pods. A traditional sweet treat, eaten during Lent and on Good Friday, is also made from carob pods in Malta. However, carob pods were mainly used as animal fodder in the Maltese Islands, apart from times of famine or war when they formed part of the diet of many Maltese. This is a traditional Malta medicine for coughs and sore throat.
