Long Island Cheese is an heirloom squash variety with a rich American history, where it’s found mentioned in texts as early as 1806. It’s fondly remembered as a fantastic pie squash by people along the eastern seaboard, and its name originates from its unique shape which resembles a wheel of cheese. Vigorous vines produce semi-flattened, ribbed, tan to buff-colored fruits that grow to an average weight between 6 and 12 pounds. Flesh is orange, dense, and fine-grained, and when cooked is tender and creamy with a mid, sweet, and earthy flavor—perfect for baking, roasting, sauteing, and frying! Don’t miss out on this one! It’s availability is limited today due to the introduction of modern squash varieties, and it has long been in danger of disappearing due to lack of planting. 90 – 100 days to maturity. Pumpkin Germination Guide Direct sow. Pumpkins do best when planted directly in the ground. They are also tender plants that are very sensitive to the cold, so be sure to wait until soil temperatures have warmed to 70°F or greater. Select a planting site. Pumpkins need a lot of space for their sprawling vines, about 50 to 100 square feet per hill. If space is limited, plant the pumpkins at the edge of your garden and direct vine growth across your lawn or sidewalk. Prepare the planting site. Pumpkins are also greedy feeders that require nutrient rich soil that is well-drained. To satisfy their hunger, mix aged manure and/or compost into the soil prior to planting. Sow seeds in rows or on small mounds known as ‘pumpkin hills”. Hills are best as the soil tends to warm more rapidly, helping to speed up germination. This also helps with water drainage and pest control. If using hills, plant the seeds 1 inch deep into the hills, 4 to 5 seeds per hill in hills that are 4 to 8 feet apart. When the plants grow to about 2 or 3 inches in height, you can thin to 2 to 3 plants per hill by carefully snipping off the weaker, unwanted plants while taking care not to disturb the roots of the remaining ones. If using rows, sow seeds 6 to 12 inches apart in rows that are 6 to 10 feet apart. When the plants grow to about 2 to 3 inches in height, you can thin the weaker plants so you are left with one plant every 18 to 36 inches. Water often during germination. Be sure to keep the soil moist but not oversaturated. Seedlings should emerge in about 5 to 10 days if soil temperatures remain consistently warm.
