Long Island Cheese is an heirloom squash variety with a rich American history, where it’s found mentioned in texts as early as 1806. It’s fondly remembered as a fantastic pie squash by people along the eastern seaboard, and its name originates from its unique shape which resembles a wheel of cheese. Vigorous vines produce semi-flattened, ribbed, tan to buff-colored fruits that grow to an average weight between 6 and 12 pounds.
