The leaves are used as a substitute for spinich in dishes. The leaves are also used as salad greens. It grows 4 to 5 feet tall. When mature it develops seed heads. The seeds need three to four weeks of cold refrigeration to break the dormancy of the seeds. You may start the seed indoors or directly in the garden in Fall or early Spring.
