Southern Giant Curled Mustard Greens is a wonderful heirloom variety with good old-fashioned taste. This is one of the fastest growing heirloom mustards, but one of the slowest to bolt. Used for fresh market and processing. Plant produces good yields of large dark green frilled mustard leaves. Southern giant curled is high in Vitamin A, B, and C. Southern Giant Curled is known for its desirable flavor when cooked as in stir-fry and soups or when young leaves are used fresh in salads. Southern Giant Curled is a beloved classic mustard green. The bright green leaves are tinged with yellow at harvest, and the flavor is always pungent and full-bodied, with the authentic “mustard green” bite. Harvest tender young leaves, as older leaves have a very sharp taste. Days To Maturity: 48-56 days. They can be grown for a fall crop and seed should be planted in late July for an early fall crop. They are high in vitamins and a healthy choice of vegetable to add to your diet. They taste delicious steamed, stir-fried, added to soups and are great to mix with other greens. Milder than regular mustard greens, this variety has thick, smooth leaves on upright, heat and cold tolerant plants. Tendergreen is widely used both in stir fry and in salads. Its tender leaves, as well as its flowering stems, are used raw or are cooked and have a flavor between mustard greens and cabbage. A cousin to kale and collards, mustard is a tenacious leafy green but it’s not as cold-hardy. Grow in clumps about 12-18 inches apart. Use straw mulch to hold in soil moisture. Start 4-6 weeks before the first frost for a fall harvest. For a spring harvest, start seeds 4 weeks ahead of the last frost. You can harvest and allow to regrow over a period of a couple weeks as long as the weather permits. Cut leafy greens 3-4 inches from the ground and allow sufficient time to regrow. Sowing: Since mustard greens thrive in cool weather, they taste best when grown as an early spring or fall crop. For a spring crop, direct sow the seed in full sun and rich soil about four weeks before the last expected spring frost, and lightly rake them into the soil. Keep the rows 10-12″ apart. When the seedlings emerge, thin them to 5-6″ apart. For a continual harvest, plant more mustard every 10-14 days. For fall planting, plant the seeds in late summer or early fall about 10 weeks before the first hard frost. Climates with warmer winters may be able to grow mustard from fall to spring. The upright leaves are supported by coarse stems that can be quite fibrous when fully mature. Smaller leaves are considerably tenderer, while larger Mustard greens require cooking. They have a succulent yet crunchy texture and a robust flavor reminiscent of pepper and horseradish. Mustard greens are also commonly referred to as Indian mustard, Chinese mustard, or leaf mustard, and botanically classified as Brassica juncea. It is a generic name that is applied to many different varieties, including white, green and red varieties. Mustard greens are of this genus should not be confused with those of the the Sinapis alba species, a completely different genus of mustard plants that is responsible for seed production used in making the eponymous condiment.
